Miramichi Bay, NB, Canada (P.E.I.) -- petite, medium salinity, lightly sweet, delicate, smooth finish, a hint of greens.
$4.25 Dukes of Topsail
Topsail Sound, NC -- petite, high salinity, ocean salt nose, buttery & firm meat, with a sweet, almost scallop like finish.
$3.75 Big Roxx
North River, near Beaufort, NC -- medium-to-large in size with high salinity and a refreshing grassy note.
$3.75 O’Cocks
Ocracoke Island, NC -- Medium size, intense salinity, with a clean finish.
$3.75 Rosebuds
Newport River, NC -- They are grown in the lower Newport River near Gallants Channel, and the new Beaufort high rise bridge. Very clean, grassy, with a little minerality. Medium-sized with medium salinity. These are grown by Frank Milchuck of Peerless Oyster Company.

Port Townsend Bay, WA -- These are the same oyster seed as a Summerstone, except these oysters have been tumbled. This lends to a stronger shell, deeper cup, and longer cultivation time which creates a very premium oyster.. Think of it like a Grade AA+ Summerstone (mineral-forward, high salinity, with a sweet, grassy finish).

North Bay, South Puget Sound, WA -- smooth, creamy, mild brine, melon-like finish.

Lilliwaup, WA -- medium size, clean, crisp minerality, hint of cucumber.
